slow-cook their meat with citrus and spices in order to preserve it.
Most Jamaicans believe that the Maroons, former slaves brought to
Jamaica from West Africa, perfected this technique of cooking and
smoking foods. In addition to all of the spices needed for jerk
chicken, the kit includes a dry rub for shrimp (fish or veggies) as
well as a packet of wood chips to give your meal an authentic smoky
grilled flavor.
